Vegan Orange and Oatmeal Muffins

Ingredients

  • 100g self-raising flour
  • 2 tsp rolled oats
  • 50g caster sugar
  • ½ tsp baking powder
  • 100ml soya milk
  • 2 tbsp sunflower oil
  • 1/2 tsp lemon juice
  • 2 tsp vanilla extract
  • 1 tsp orange zest
  • ½ jar Mrs Bridges Thick Cut Orange Marmalade

Recipe

Place all ingredients together in a bowl (except the marmalade) and mix to combine.

Line a cupcake or muffin tin with cases and spoon 1 tbsp the cake mix into each.

Then add 1 tsp of the marmalade before topping with more mix.

Bake in a pre-heated oven for 15-18 minutes (170c / 150c fan) and until golden.

For the oatmeal topping

3 tbsp rolled oats
2 tbsp coconut oil
3 tbsp soft brown sugar
2 tsp orange zest

Method

Melt together in a non-stick pot.

Transfer to a lined baking sheet and bake in the oven for 15 minutes at 200c/ 180c fan.

Allow to cool before sprinkling on top of the muffins.
