15 minutes preparation, plus 10 minutes cooking
1 x 225g block of halloumi
1 egg, lightly beaten
50g polenta
A generous pinch smoked paprika
A generous pinch dried oregano
Olive or sunflower oil spray (optional)
100ml Mrs Bridges Chilli Jam
1/2 lime, juice only
Drain the block of halloumi and then pat it dry with some kitchen paper. Cut the halloumi into chunky 'chips'- you should get 10-12 chips from a block of halloumi.
Put the polenta into a shallow, wide bowl and add the smoked paprika and oregano. Dip each piece of halloumi into the lightly beaten egg and then into the seasoned polenta, making sure to completely cover the halloumi in egg and then polenta. Spray lightly with oil, if desired.
Carefully put the polenta fries into the air fryer and cook at 180 degrees for 6-8 minutes, turning halfway through.
While they are cooking combine the Mrs Bridges Sweet Chilli Jam with the lime juice and mix. Serve the polenta fries immediately with the Mrs Bridges Chilli Jam dipping sauce
Cooks tip: These can also be deep fried. To deep fry heat sunflower oil to 170 degrees and fry for 3-4 minutes until golden and cripsy.
