- 8 lamb chops
- 4 tbsp golden caster sugar
- 3 tbsp Mrs Bridges Semi Ground Mustard
- 1 tsp ground cumin
- a little olive oil
- salt and pepper to taste

Combine the sugar, mustard, olive oil, ground cumin and salt & pepper in a flat-bottomed bowl. Stir to combine.
‘Dip’ each of the lamb chops in the mix, you can use a pastry brush to coat them on all sides. Can be prepped ahead of time and kept in the fridge.
Grill the cutlets on a bbq, or under a grill on full heat, for approx. 4 minutes on each side, depending on thickness.
Allow to rest for a few minutes before serving.
