Mrs Bridges Pineapple & Mango Salsa Grilled Scottish Salmon Fillets

Serves 4

Ingredients

4 Scottish Salmon Fillets

3 Tablespoon of Olive Oil
1/4 cup fresh lime juice
1/4 cup finely chopped shallots

8 Tablespoons of Mrs Bridges Pineapple & Mango Salsa

4 Tablespoons of Mrs Bridges Garlic Mayonnaise

Small bunch of roughly chopped coriander

 

Preparation

  1. Preheat grill.
  2. Mix lime juice, shallots and Mrs Bridges Pineapple & Mango Salsa in a bowl.
  3. Brush oil over fish. Season with salt and pepper.
  4. Grill fish until cooked through, 2 minutes per side.
  5. Remove fish and top each fillet of cooked fish with 1 tablespoon of Mrs Bridges Garlic Mayonnaise followed by 2 tablespoons of Mrs Bridges Pineapple & Mango Salsa mix
  6. Garnish with coriander and serve immediately
